The Cuppone Alpha is the electric rotating deck pizza oven that has replaced the Giotto since March 2025. The Giotto is no longer manufactured: no Giotto ovens leave the Cuppone factories any more. The Alpha comes in two sizes: the AO110/1TSN at €13,500 (7 pizzas Ø 35 cm) and the AO140/1TSN at €15,000 (10 pizzas Ø 35 cm). Our prices include the Napoli kit, which lets you bake Neapolitan pizza at 450 °C.

Alpha or Giotto: what are the differences?

The Giotto is no longer produced. Since March 2025, Cuppone has manufactured only the Alpha, and no Giotto ovens leave its factories any more.

The principle is unchanged: an electric oven with a rotating deck, with the same capacities. The model references match one to one:

  • Alpha AO110/1TSN = former Giotto GT 110;
  • Alpha AO140/1TSN = former Giotto GT 140.

The most visible difference is the design: the sides are more upright and the lines more angular. But Cuppone has also reworked safety, maintenance, the hood and the software.

Cooler outer surfaces

  • Added front panel: a second front panel is fitted in front of the first, with a 10 mm air gap between the two. The outer panel stays at a safe temperature in case of accidental contact.
  • Door: the outer glass is now separated from the inner glass by a 10 mm air gap, for the same reason.

An oven that is easier to maintain

  • Protected deck heating elements: a steel part shields the central deck elements from ash. On the Giotto, they could break if cleaning under the stones was not done regularly.
  • Better-cooled electrical compartment: new filters protect the cooling fan, and panels close off the entire underside of the oven.
  • Lower bodywork: the way the panels are assembled has been redesigned, which makes assembly and cleaning easier.

Greater working comfort

  • 4000 K LED lighting: the chamber is lit with white light, which shows the true colour of the pizza during baking.
  • USB port next to the touchscreen, to import recipes or update the software.

More complete software

The Giotto already let you schedule switch-on and switch-off, create recipes, use ECO mode and monitor consumption. The Alpha adds:

  • professional scheduling: switch-on and switch-off times, notes and recipes are set day by day, over a period of up to 10 years. The Giotto's simple scheduling is still available;
  • a consumption cap: you set the oven's maximum consumption in kWh, and you turn this limit on or off whenever you like;
  • enhanced recipe management: favourite recipes and notes within each recipe;
  • guided setup at first start-up: language, date, time, then warranty activation, so the warranty starts on the first day of use.

Is the Alpha a Neapolitan oven?

Not in its basic version. The standard Alpha is an oven for traditional pizza. It is the Napoli kit that makes it capable of baking a Neapolitan pizza. This kit includes:

  • a special high-temperature stone, which retains heat better and keeps the deck consistent between two loads;
  • reinforced heating elements, which bring the chamber to 450 °C.

The Napoli kit is already included in our prices. The €13,500 and €15,000 quoted are for an oven that is ready for Neapolitan pizza. If you are comparing with another offer, check that the kit is included: the 17.4 kW and 23 kW power ratings are those of the version with reinforced elements.

The top and the deck are adjusted separately, from 0 to 100%, from the touchscreen. The oven therefore bakes a Neapolitan pizza just as well as a classic pizza at a lower temperature.

How much does a Cuppone Alpha cost?

The AO110/1TSN costs €13,500 and the AO140/1TSN €15,000, Napoli kit included. Relative to capacity, that works out at about €1,930 per pizza space for the 110 and €1,500 per pizza space for the 140. The 3 extra pizzas of the larger model cost only €1,500: it offers the better price-to-capacity ratio of the two.

Two points to know about the invoice. Businesses established in a European Union country other than Italy, with a valid intra-community VAT number, are not charged Italian VAT. Transport is quoted separately according to the delivery address.

A new hood, at a substantial discount

The Alpha's hood has been redesigned compared with the Giotto's:

  • its surface is larger, so it also captures the fumes escaping at the sides;
  • the filters have a new geometry and the motor is no longer in direct contact with hot air. Routine cleaning of the motor's protective grille is no longer needed.

We offer it at a substantial discount, 20 to 23% below the usual price depending on the version:

  • hood with motor: €2,800 instead of €3,620 for the AO110/1TSN, €2,980 instead of €3,730 for the AO140/1TSN. It extracts 700 m³/h, with lighting and a 150 mm diameter outlet;
  • hood without motor: €2,300 instead of €2,910 for the AO110/1TSN, €2,400 instead of €3,010 for the AO140/1TSN. It connects to your own extraction system.

Extraction requirements depend on your premises and on the regulations in your country. Have the installation approved by your installer before ordering.

What the rotating deck changes during service

In a fixed deck oven, the pizzaiolo turns each pizza with the peel to even out the bake. In the Alpha, it is the deck that turns. Each pizza passes in front of the door at regular intervals: you always load and unload in the same place, without reaching to the back of the chamber.

In practice, this brings three things:

  • even baking even when the pace picks up, since every pizza follows the same path;
  • fewer movements, so a station that can be entrusted to a less experienced person;
  • high output from a single opening: 70 pizzas per hour on the 110, more than 100 on the 140.

The rotation is adjustable: two programmable speeds, two customisable speeds, reversal of direction and a button to stop the deck.

What electrical power and what consumption?

The Alpha runs on a 400 V three-phase supply. The maximum power is 17.4 kW for the AO110/1TSN and 23 kW for the AO140/1TSN. This is the figure to give your electrician so they can check your supply contract and your electrical panel.

This maximum power is mainly drawn while the oven heats up. Once the oven is hot, it uses considerably less.

Three functions help keep consumption under control:

  • the consumption cap: you set the oven's maximum consumption in kWh yourself;
  • ECO mode reduces consumption during quiet periods;
  • scheduling switches the oven on and off automatically, so it is hot when you arrive without heating for nothing.

Dimensions and door access

An oven weighing more than 500 kg has to be able to get into the premises. The Alpha is designed to be tilted on delivery: it fits through an 80 cm wide door, with a clearance height of 181.5 cm for the AO110/1TSN and 197 cm for the AO140/1TSN. It is mounted on castors.

Once in place, allow for the following footprint:

  • AO110/1TSN: 139 x 144 cm, 170 cm high;
  • AO140/1TSN: 169 x 174 cm, 170 cm high.

The oven opening measures 62 x 12 cm.

AO110/1TSN or AO140/1TSN: which one should you choose?

Choose the AO110/1TSN if you turn out up to 60 or 70 pizzas in your busiest hour, or if space is tight: it takes up 30 cm less in both width and depth.

Choose the AO140/1TSN if you exceed that pace, if you do takeaway on top of table service, or if you plan to grow. For €1,500 more, you gain 3 pizza spaces and about 30 pizzas per hour.

In both cases, check the power available: 17.4 kW on one side, 23 kW on the other.
