What makes the price of a pizza oven vary?
Two ovens with the same maximum temperature can have very different prices. Here are the criteria that matter most.
- Capacity: this is the first price factor. Moving from 2 to 4 pizzas with IZZO takes the price from €7,500 to €11,200.
- The deck: a biscotto di Sorrento deck, suited to baking above 400°C, costs more to manufacture than a standard refractory deck.
- The rotating deck: it makes work easier during busy services but adds a mechanism. The rotating-deck AVGVSTO PR costs €5,500 more than the AVGVSTO 9E.
- Power and thermal inertia: the more massive and powerful the oven, the better it recovers its temperature between batches.
- The controls: electronic or touch controls allow you to program and finely adjust the deck and dome heat.

Comparing only the displayed price is misleading. A more useful indicator is to divide the price of the oven by the number of pizzas it can bake at the same time:

Larger ovens therefore cost less per pizza produced. What total budget should you plan to equip a pizzeria?
The price of the oven is only part of the investment. To build a realistic budget, also consider:
- The stand: most dome ovens need a stand suited to their weight (often over 500 kg). Allow €400 to €2,400 depending on the model.
- Smoke extraction: chimney, hood or extraction kit, from €180 to €2,800 depending on the configuration and the constraints of your premises.

How much electricity does a professional electric pizza oven use?
The displayed power (for example 13.2 kW for the IZ6) is the maximum power, used mainly while the oven heats up. Once hot, the oven uses much less. It is the average consumption that matters for your bill:
- IZZO IZ2: 4.8 kWh;
- Resto Italia CRATOS 9: 6.5 kWh;
- Zanolli AVGVSTO 6E: 7.2 kWh;
- IZZO IZ6: 8.5 kWh;

The calculation is simple: divide the price of the oven by the margin you make on each pizza.
For example, with a margin of €5 per pizza, a €12,500 oven is paid back after 2,500 pizzas. At 80 pizzas per service, that is around 31 services, or just over a month of business for a pizzeria open six days a week.
This example is deliberately simplified, but it shows that a high-performance oven, able to bake pizza after pizza without losing temperature, pays for itself quickly. Conversely, an undersized oven costs you sales every busy evening.
New or used pizza oven?
